Mediterranean, Moroccan, Madness

Truly the perfect plate! Everything goes so well together. My Moroccan inspired chicken gyro, aromatic Indian rice, Greek tzatziki, and good ole sautéed veggies.

The Rice:

Serves 3-4

Ingredients:

  • 1 cup rice
  • chicken broth or stock
  • 1 cinnamon stick
  • 3-4 cloves
  • 1 bay leaf
  • 4-6 saffron threads
  • 1 tbsp butter
  • 2-3 tbsp golden raisins
  • 2-3 tbsp cashews parsley
  • salt
  • black pepper

Preparation:

Cook your favorite rice (I used brown) according to the package instructions but swap water for chicken stock or broth. Add saffron threads, cloves, bay leaf and cinnamon stick to the boiling rice.

When the rice is close to being done, add butter, chopped parsley, chopped cashews and golden raisins. Fluff with a fork and serve!

 

 

The Tzatziki Sauce:

Ingredients:

  • 1/3 cup grated cucumber
  • 1 cup greek yogurt
  • 1 large clove garlic, chopped
  • 1 tbsp fresh dill, chopped (or 1 tsp dried)
  • 1 tbsp fresh parsley, chopped
  • 2 1/2 tbsp olive oil
  • 1 tbsp lemon juice
  • black pepper
  • salt

Preparation:

Using a box grater, grate the cucumber then place it in 2-3 layers of paper towels, squeezing out as much liquid as possible. Discard the liquid and mix cucumber and all remaining ingredients in a bowl. Serve immediately or chilled.

 

The veggies:

Sauté shallots and garlic followed by vegetables of your choice (I used green beans and squash). Season with salt, black pepper, paprika, oregano, and fresh chopped parsley.

 

Plate them all together!

    Just made the rice and paired it with a Mediterranean shrimp stew. It came out wonderful! So soft and full of flavor. I added a little bit of turmeric and swapped the parsley for cilantro. Great recipe!
